Flowers are so basic… but Caramel Apple Roses are definitely not! I’ve never been a big flower person and my husband knows never to buy me any. Even at our wedding, I wanted the least number of flowers possible. Yes, they are beautiful to look at and pleasant to smell, but they never last very long.
I’m more into unique, flower-shaped foods aka my Caramel Apple Rose Puff Pastry. These, too, are beautiful to look at, pleasant to smell, AND never last very long but at least I have the satisfaction of consuming these delightful treats. The key to these blossoming desserts is choosing the right apples.
I recently discovered Ambrosia Apples from BC Tree Fruits, which are named after “the food of the Gods” in ancient Greek. The naturally sweet apple is light, juicy, crispy, and simply divine. It’s grown and nurtured in British Columbia, Canada, where it was first discovered in the 1990’s, so still based in the hometown of the original. Learn more about the birthplace here.
My recipe is blissful and surprisingly simple. The flaky layers of pastry wrap around the sweet slices of apple, which is then drizzled with caramel sauce and topped with peanuts. Impress your guests or save them for yourself. I won’t tell.
Here’s my Caramel Apple Rose Puff Pastry recipe:
- 2 Ambrosia Apples
- 2 tablespoons lemon juice
- 4 tablespoons water
- 1 sheet puff pastry (thawed)
- all-purpose flour, for dusting
- 4 tablespoons fine sugar
- 2 tablespoons cinnamon
- 4 tablespoons butter, melted
- caramel sauce
- peanuts, chopped
- Cut apples in half and remove the core. Use a mandoline or sharp knife to slice apples into thin, evenly pieces. FAB TIP: Don’t cut the apples too thick or it will break when you roll.
- Combine water and lemon. Soak sliced apples. This will help prevent oxidation and browning. FAB TIP: Ambrosia Apples takes longer to oxidize, so it’s great for kid’s lunches or fruit salads and platters.
- Microwave soaked apples for 3 minutes or simmer to soften. Drain water. Set aside.
- Preheat oven to 375 degrees. Grease muffin pan and aside.
- Lightly dust your work surface with flour. Unwrap the puff pastry and cut into 6 equal parts.
- Brush the top with butter.
- Combine sugar and cinnamon. Sprinkle the mixture on top.
- Place the apples on the half top of the puff pastry dough so that they overlap each other.
- Fold the bottom part of the dough to cover the bottom half of the sliced apples.
- Brush butter on the bottom part of dough. Sprinkle sugar and cinnamon mixture.
- Loosely roll from one end to the other. See video below recipe.
- Gently place into greased muffin pan.
- Bake for 40 minutes or until cooked.
- Drizzle with caramel sauce and garnish with peanuts.
- Serve and enjoy!

I’ll take these over real flowers any day. The Ambrosia Apples were perfect for this recipe because of the naturally sweet flavor and creamy texture. They are also great on its own as a snack. You’ll enjoy every crispy, juicy bite.
